Monday Munchies - Jello Cookies (and play dough)

I think this would be such a fun project to do in the kitchen with my daughter! Of course she's only 17 months old, so I may need to wait a little while, but it's definitely on my radar for later! Apparently the cookie dough is good as play dough also - so let your child play with some of the dough, form it or cut it with a cookie cutter and then bake it!

Monday Munchies - Shakes for Breakfast?

If you like Chai and you like the idea of a shake for breakfast, this post is for you. This "shake" is quite a bit healthier than most and sounds delicious to me, especially for breakfast! I'm going to have to try it out!

Monday Munchies - Mini Meatballs

These are some deliciously easy mini meatballs:

8 oz. mushrooms, finely chopped
1/2 c finely chopped onion
2 T olive oil, divided
1 egg
1/2 c whole wheat bread crumbs
1 lb. ground turkey
1 tsp. garlic powder
1/4 tsp. salt

In a large skillet, cook mushrooms and onions and 1 T of olive oil over medium-high heat for 5 minutes or until mushrooms are tender and starting to brown, stirring once.  Remove and set aside to cool slightly.

In a bowl, beat egg with a fork.  Stir in bread crumbs, turkey, garlic powder, and salt.  Stir in mushroom mixture.  Shape into 12 to 15 balls. 

Now you can either cook on the stove top or in the oven.

Stove top:  Heat remaining 1 T olive oil in the same skillet over medium heat.  Add meatballs.  Cook 10 minutes or until done.

Oven:  Omit the last 1 T of olive oil and put in a foil lined pan with sides and bake at 350 for 20-25 minutes.

Monday Munchies - No bake energy bites

Every heard of no bake energy bites? I posted a recipe for them last year in August . . . and found another one that I quickly tried out. If you need a quick bite of "something" to hold you over until supper (or maybe like the girl below - who must be hypoglycemic like me - to keep you from biting someone's head off), these are both great and very yummy recipes. Monday Munchies - Homemade Pizza Sauce

Whoops!  This should have posted yesterday but I just realized I had today's date on the post.  So, Monday Munchies is arriving on Tuesday!  The ironic thing is I whipped this up this morning for dinner tonight and that's what triggered I didn't see it post yesterday. 

We like this easy, inexpensive homemade pizza sauce.  No more paying $1.99 for a small jar of sauce; just mix up a batch of this in no time and you have 2 cups!

1 - 15 oz can tomato sauce
1 tsp of oregano, basil, garlic powder, and onion powder
2 tsp olive oil

In a small saucepan, whisk tomato sauce with the spices and olive oil.  Simmer for 6 to 8 minutes.  Makes 2 cups!

Monday Munchies - Honey Mustard Dressing

This is a quick and easy recipe for a delicious Honey Mustard Salad Dressing from $5 dinners.

1 tsp vinegar
1/4 c. Dijon or regular mustard
1/2 c. honey
salt and pepper

In a small bottle combine all ingredients and shake. For a creamier dressing add 1 T. of milk or I like to add Greek yogurt!

Monday Munchies - No Bake Chocolate Chip Granola Bars


We posted a yummy granola bar recipe here last year. While those are yummy they are more of a crunchy granola bar. They are a big hit at our house and easy to make but this week we tried a no bake granola bar that may be more our speed.

I whipped these up one day while we were also getting ready for school, eating breakfast, you know the usual morning routine and we still made it to the bus on time! That tells you how easy they are.

These no bake granola bars are a must try! The whole family will enjoy them!! I love that there are only 7 ingredients.

Monday Munchies - Rainbow Cupcakes


One project I have for the month of February is to organize our photos. Usually, when I download the photos from the camera I organize them right away . . . however, time got away from me and I have 2 years of photos to organize. When I was organizing I came across these photos that reminded me of a cute recipe the kids and I made . . . rainbow cupcakes.

Make a white cake from scratch or a box. Divide the batter - we divided it into 5ths so we could have 5 colors. Then layer the colors one at a time and bake! This made the cutest rainbow cupcakes . . . sorry I do not have a finished picture but trust me they were adorable. We passed some out at school and they were a huge hit!
