Tuesday Tip - Recipe Binder

Do you get overwhelmed with keeping your recipes organized or finding your favorites when you need them?  Well here is a great post by The Peaceful Mom on starting a recipe binder.  I have been using a recipe binder for years!  In fact . . . I don't own even one cookbook.  There were probably a few gasps there but nope not even one cookbook . . . just me and  my recipe binder. 

In the front of my recipe binder I have a list of breakfast, lunch and dinner ideas to help me start menu planning each week.  Then I also have copies of my grocery list.  The rest is similar to the Peaceful Mom's.  Hope this helps you get your recipe's in order!

Monday Meals - Yummy Salad

So I pretty much made my version of this salad, but love the recipe gave me the idea to put apples, walnuts and feta cheese together. Yummo! That's all I have to say! I've been making my own raspberry vinaigrette for a few years now (no set recipe, just kind of throw oil, water, red wine vinegar, sugar and raspberry jam together), so it went perfect with this.

Oh, and I chose to omit the bacon :-) Other than that, it was the same! Seriously, it was a good combo of flavors - simple but delicious: I highly suggest it!

Tuesday Tip - Freezer Cooking

I love my crock pot . . . and I love when a meal is easy to put together - which is why I'm enjoying trying these recipes at RingAroundTheRosies. I just put together the recipe for the Chicken Teriyake, and although we haven't eaten it yet, it does sound quite delicious (for those who know me well, don't worry, I won't eat the pineapple chunks! :-)

Monday Munchies - Honey Mustard Dressing

This is a quick and easy recipe for a delicious Honey Mustard Salad Dressing from $5 dinners.

1 tsp vinegar
1/4 c. Dijon or regular mustard
1/2 c. honey
salt and pepper

In a small bottle combine all ingredients and shake. For a creamier dressing add 1 T. of milk or I like to add Greek yogurt!

Freelance Friday - Spring and Summer Party Ideas

I don't know about you, but I love Pinterest. I love it because it helps me organize ideas and tips. Now when I find a good idea, I "pin" it to the appropriate board (kind of like a virtual cork board) and know exactly where to go to find it again . . . unlike my piles of papers that are somewhat organized (or not).

Monday Meals - White Chicken Enchiladas

I was able to get together with a dear friend last week after many months of trying! She made these enchiladas which were SO yummy! I can vouch for this recipe - not only is it easy, it's delicious! It's getting added to my list of regular meals. The other thing I like about it is that it doesn't call for any canned soup and yet is easy and tasty!
