This time of year a great Chili always sounds so yummy! Well this year I decided to branch out and try a white chili. I must say I like it even better than regular chili.
I got this recipe from the Peak Sports Club Newsletter. Every month they put in a few recipes that are healthier options and this one is yummy!
White Chili
3 cans great northern beans DO NOT DRAIN
1 can Rotel tomatoes DO NOT DRAIN
2 c chicken broth (16 oz.)
1 lb cooked, diced chicken (I put the chicken in a mini crockpot with chicken broth on High for a few hours)
1 med onion diced or 2 T. onion flakes
1/2 tsp cumin (or if you don't mind the heat 1 tsp)
1 tsp chili powder
1 tsp oregano
1 tsp garlic powder
1 tsp Worcester sauce
Mix all together. Cook in slow cooker for one hour. Then add 1-2 cups shredded monetary jack cheese. Heat until warm . . . the longer the better!
