Easy-peasy chili
This recipe is a favorite at our house. It doesn't take long to put together . . . BUT it does take some planning ahead because the secret "ingredient" is that it has to be on low in the crockpot for at least 8 hours. OK, so it doesn't HAVE to be on for 8 hours, but we notice that it's not as good if it's not in for that long: the meat is much more tender and tasty when left in long enough.
OK, enough about that - on to the recipe!
(1) lb ground beef cooked
(3) cans of beans (I use 2 of kidney beans, 1 of pinto)
(2) 15 oz cans of tomatoes (diced, stewed, sauce whatever your preference - I use 1 diced, 1 tomato sauce)
(2) chili packets
That's it! Mix it all in the crockpot on low and let simmer for 8 hours. I mix it a few times during the day just to make sure it doesn't stick/burn.
Serve with cheese and corn chip and enjoy! Serves 4.
This recipe is super easy to double for a bigger crowd!
(Tip: I buy a bunch of ground beef when it is on sale then I cook it all up and freeze it in ziploc bags - 1 lb in each. Doing this saves me time and sanity, and it makes this recipe super easy! Grab a bag of ground beef out of the freezer, open some cans, and voilĂ ! You've got supper)
